Cajun Potato Pockets

Need a quick and easy side for the Fourth? Try these outstanding potatoes that can be customized to your taste...don't like Cajun or spicy food, try Greek seasoning!


What do you need?
Yukon Gold Potatoes (1 per person), Bell Peppers (green, red, yellow), Onion (I use vidalia), Olive Oil, Cajun or other seasoning and aluminum foil.


Directions:


Select medium sized potatoes, generally one per person and wash.
 Dice potatoes in to 1 inch cubes.
Chop Onions and Peppers. Use your favorite types and amounts to suit your needs. Be creative! Throw some fresh jalapeno slices in to kick it up!
Cut off about a foot of aluminum foil. Drizzle Olive Oil over the top and season with Cajun or other seasonings to taste.
Tightly wrap and place on a medium grill for 20-25 minutes. Need a larger amount? Place ingredients in a foil pan and cover, bake at 350 for around 30-35 minutes or until the potatoes are tender.

Be careful when opening the steam is hot! Enjoy your quick, easy and spicy Cajun Potatoes!
